Recipe

  • Don't follow the jasmine rice recipe. Water to rice is 1.25:1 for jasmine.

  • pickerel and walleye are interchangeable (the same fish) in my neck of the woods.

pickerel over bed of rice

ready to wrap & bake (bbq @400F)

Peaches are in season this month, so it only tastes this great in August.
Same applies to the corn-on-the-cob that accompanied this dish.

Peaches with fish is abomination. Just no. Rest can stay tough.

I think this looks fantastic I make a halibut with mango salsa often in the summer and I think I’ll try it with peach salsa next.
