1. I don't think Switch online functionality will be turned off any time soon.
2. Both of the Zelda games from this generation are fantastic. If you are into turn based RPG, I really liked Fire Emblem: Three Houses. There are also many games that are not exclusives but are great on the handheld form factor, such as Hades, Stardew Valley.
3. Mario Kart and Mario Party are the classic ones. Mario Kart 8 Deluxe, with the expansion pass, is awesome with 64 tracks. I am not bored of it yet. If you are into Mario Party, I have played Superstars and Jamboree. I would recommend Superstars first, but both are fun. I haven't played Switch Sports, but it could also be a fun one for guests.
4. I believe you can play Kart and Party with people you know.

There are some games that are popular that I haven't tried, notably I have never tried the Splatoons games. These are popular for multiplayer.

For single player, Pokemon Legends Arceus is fantastic. It's the game that 8 year old me wanted when I said I wanted a Pokemon game on a home console. Almost all the Pokemon are catchable without buying anything else, with there being 2 that are locked behind missions unlocked by buying the other games. The game plays more like monster hunter than a traditional Pokemon game, using stealth, crafting, and pokemonless "combat" to get opportunities to catch them. Easily the most fun I've had with a video game since booting up Skyrim in middle school.

I hear that Monster Hunter Generations Ultimate is excellent

Animal Crossing is fun if you like doing the same thing every day. I imagine it's not as active now, so the multiplayer aspects might not be as enjoyable. I view the game as a satire of consumerism and predatory lending, which I don't think it really is, but it should be. It really satisfies that collecting/completionist itch for me.

The only other games I've played a lot have already been recommended, but I'll add another for Mario Kart and Breath of the Wild. Breath of the Wild is probably the best game I played on the Switch, tons of content there and some of the puzzles are quite good (some are not) and if you're into 100% completion it'll keep you busy until Baron is the new president .

Edit: my best advice is to get a proper controller and it doesn't have to be the Nintendo brand. The joycons suck for a lot of reasons

People have probably already said but pretty much all the first party Nintendo games are good, and most are single player offline too. So your Marios, Zeldas, Metroids, and whatever else are all solid. Otherwise it comes down to whether you'll play it docked or handheld.

A game worth getting is Watermelon game, an amazingly frustrating physics based merge game that will drive you nuts despite how simple it is

It's perfect for turn based stuff. Fire Emblem, Tactics Ogre, even the Mario and Rabbids Xcom-like is pretty good. I really enjoyed Dicey Dungeons on it as well.

For multiplayer, Mario Kart and Party alway go down well, and Super Smash Bros is great if you have people of similar skill levels.
