I use Waistline. It pulls food data from OpenFoodFacts and has support for meals and recipes as well, although I mostly track weight not nutrition.

There are several on F-Droid. There's Energize and Food You, which integrate with some external food databases.
An issue I came across with the calorie apps on f-droid is that there isn’t one that simply lets me set a calorie goal/limit, and then lets me enter calories throughout the day and shows the running total and the remaining calories allowed. Basically I just want a special-purpose calculator app.
Please don’t force me to select what food i ate for which meal; just let me enter numbers.
That's something I notice Samsung Health doing. Letting users input calories as is. There's also a calorie goal, but I haven't explore much whether that's a default it gave based on weight and height; it also have further body composition data it would like, so my guess the calorie goal would also take that into account; if not fully customizable with your own goal.
But using Samsung Health means it will be locked down in their ecosystem, and also most likely harvested for whatever they want that data for; most likely more ads for their smart juicer or smart fridge or something.

The app I am currently using is called Calory. Sadly it’s not FOSS. I run an older version and block internet access to it so I don’t get the nag screens to pay their subscription pricing.

I'd consider a web based one, not android specific but they run anywhere on any browser.
I found https://cleanslate.sh/ to be interesting, and it has a lot of very useful info attached on foods/exercise in a very no bullshit fashion.
There's a few others if I search github that are selfhosted, might not be your cup of tea though.
The biggest issue with Foss apps is their food dabase isn't as likely to be as good as the paid ones
Good call on using a website. Didn't even think of that. That makes it way more cross platform without things like app availability. Kind of like how I use piefed then lol

I did check out a while ago. Just thought to come here and get recommendations based on people's experience though.
