I'd like to be able to follow users and communities so I'm looking to switch to kbin. Are there any instances that use green energy?

Not a direct answer to your question but slrpnk.net has green energy on the roadmap.

Actually better than that: I already have the batteries and the inverter and just need to get some solar panels to install (next year sometime) and then it will run almost completely on locally produced renewable energy.

Right now it is still on local grid power, but that is mostly geothermal and wind (at least 60% on average).

Nice! Just out of curiosity: is there currently anyway to prove the use of renewable electricity to the public without revealing sensitive personal data?

Many professional hosters have certifications, but the problem with that is usually that in a mostly fossil electricity grid, buying up some renewable capacity doesn't really change much even if technically you can claim to run on 100% renewable energy.

For my private system I'll probably put up a public Grafana dashboard at some point that will show the amount of electricity produced and the battery charge status. But I will have a few other things connected to it, not only the servers running slrpnk.net
