I think you can do this by mounting a macos VM: https://www.wikihow.com/Install-Macos-on-a-Virtual-Machine New macOS versions do not require iTunes and you can back up directly through the finder window. Your backup will be located there: /Users//Library/Application Support/MobileSync/Backup

I self-host Gitea and is pretty lightweight and low maintenance. Great solution!
