I could be wrong, but I think Goliath challenged the Jews to one-on-one combat because he was a giant (he was def a "giant;" the part I could be wrong about is whether he challenged or his leader / master challenged). I couldn't say for sure; I'm an atheist and primarily study the first two centuries of christianity (it's a fascinating topic).
