I am really pretty almost 100% sure that the surface of the meat, which is what the band saw potentially contaminated, would be reaching temperatures far above 60C. You're not going to get maillard reactions necessary to develop flavor (which require temps in the hundreds, which is why they don't happen if shit's too wet and water has to boil off first) and the whole thing isn't going to be considered "cooked" until it's at that temp or above internally

Is it gross? Yes. Would it kill someone if served? I really, really, really doubt it, unless they're immunocompromised to the point that whatever potential bacterial spores might have survived cooking could proliferate inside of them.

I just think it's a case of "this is really nasty and if you're prepping meat and putting it into refrigeration then you absolutely will kill someone," not an instance where Gordon Ramsay needs to be theatrically ejecting everyone from the restaurant because they're all gonna die
