New Zealand. The whole country feels like a national park especially the south island. However, you would need to rent a car to get to and between a lot of places.
I want to hike to Mordor
It can be a treacherous hike in bad weather! You can arrange for bus pickup because it's a through hike, but if the weather is so bad, they'll email you and tell you the bus is canceled. Absolutely worth hiking if you're ever in NZ!
TIL, hiking to Mordor can be dangerous :P
Please tell me the bus has giant eagles painted on the side.
One does not simply hike to Mordor 🙄
If you're coming to New Zealand, you can throw a dart at a map, go there, and you'll probably find some amazing walking track.
But if you want recommendations, my top three are lake Waikaramoana, tongariro national park, and anything in fjordland
But then there are places like Sanctuary mountain
So many options, it really depends on what you want.
Spain! Spain has great country side roaming. You can visit the deserts very well know westerns were filmed on. Run up on one of the highest peaks of the EU. Eco tourism here is great.
Plitvice National Forest has absolutely gobsmackingly beautiful waterfalls in Croatia. Highly recommend going and hiking around.
Just (like most places in Croatia) make sure not to go during peak season!
Everyone here will tell you their own country is gorgeous. If I was you, I'd go to the UK and Ireland, visit the giants causeway, the lake district, Snowdonia, the Yorkshire dales.

That's a shame but totally understandable. I hope we return to something sane before they destroy the parks for drilling or logging or whatever. The national park service really has some amazing natural resources.

Gonna do some patriotic promotion and mention NewYorkTimes and Telegraph articles about where I Live as there is a national park here.

Iguaçu Falls, on the border between Brazil and Argentina. Nearby you could also visit Itaipu Dam, formerly largest in the world.
Going a bit into the same Brazilian state of Paraná, there's also the amazing Vila Velha park, with incredible sandstone formations.

Those are probably the most famous but there are much more from where those came from.
Itaipu dam was incredible. Breathtaking scale. Iguazu was also awesome but too busy for my tastes.
