It's not because they know to avoid chocolate, it's because they're not attracted to sweet things (cats lack tastebuds for sweet). I was making some chocolate buttercream frosting that my cat was highly interested in, though.
They're attracted to the fat/oil in it as that's one of the tastes they have
Yeah, that's the point, assuming that cats won't be attracted to chocolate might be highly misleading and people should still exercise caution with it. My cat has a thing for coffee, too... another thing which can be quite harmful to cats.
