They go from light purple with bits of green to full dark purple, mostly overnight. And that is the point at which the birds eat them. I know I can harvest them when still not quite ripe and they will ripen up for me. But I try not to take too many from the birds. There are two much larger patches at my dad's house that I can go and pick if I really want some. These are nice for a quick bite while walking in the morning.
