I got a bunch of 'extra' little green bell peppers I gotta do something with.

I cook almost entirely on vibes and couldn't find a recipe to link thats close enough to how I do stuffed peppers but basically

  • cook rice in stock with tumeric, safflower, or saffron for color.
  • preheat oven to 375°F

In a separate pan

  • slowly cook down finely diced garlic, onions, shallots, and carrots in olive oil until everything is soft and fragrant
  • cook down diced tomatoes until mostly mush
  • add in whatever protein, cut up into fairly small pieces. Usually mushrooms and chickpeas but you can use whatever. Tvp or tofu also works well.
  • add in spices, this is entirely on vibes and I am incapable of describing which spices and how much
  • cook until protein is almost done
  • mix in cooked rice
  • mix in diced tomatoes

Once done making stuffing

  • stuff mixture into hollowed out peppers, I like to do them upright but cut in half length wise is easier
  • top with fried onions or whatever else you have
  • bake on tray in oven until tender, about 15-20 minutes

I'll swap out or add basically everything except for the peppers and the rice.
