A stuffing of zucchini, rice, onion, maybe some shrooms is always nice. Essentially a vegan gemista.

Edit. I've never precooked the peppers before stuffing, they still get nice and soft, especially if covered with foil. The recipe above seems overcomplicated, here is one that is more like what I have done. CW for second link, milk products, that can be left out just fine.
