I just mix in some salt soon before I put them on the pan, but that would work too.

Most recipes will call for a bit of salt. Thats fine, but it's homogeneous is the mix which means the flavor is uniform. Salt on top hits your tongue directly for a nice pop of flavor.

I put coarse salt for the flavor, that preserves the 'pop' rather nicely in my experience. But I will try sprinkling the salt on top tonight and see how it goes,
