This is kind of a weird request, but I recently discovered that Barotrauma's source code is available on github. I own the game and plan to play it that way, but hypothetically could I download the files, compile the game, and play it that way?

Maybe. Does that project include the graphics assets? Usually they're just source. I glanced at the front page but didn't see anything that looked like assets.

according to the Contributing.md on the github it is missing some files that are included if you buy a copy of the game:

The BarotraumaShared/Content folder, which contains Barotrauma's art, item XMLs, sounds, and other assets, is not included in the GitHub repository. If you have a legal copy of the game, you can copy the Content folder from the game's files to BarotraumaShared/Content.
