I wanna see this used in a vampire movie. Like a lost boys reboot, they did all kinds of home alone style vampire traps.
Tangentially related, but there's that scene in Constantine where they use a special cross to bless the water in the Fire Suppression system and then activate the sprinklers on a room full of demons.

I do not think it's holy water after evaporation anymore. Holiness is only soluble in liquid water (or wine) and it's highly volatile โ if not properly stored it will end up being normal water again after a few hours at most.
I think the holy potential of the water depends on the mass. Much like how water vapor from boiling water quickly dissipates it's heat, I think holy water vapor would be mostly mildly uncomfortable to vampires due to how lowly concentrated it is
