"Oh no emulsified oil" ๐ you'd happily put oil all over your pasta without a second thought but oh, whip some egg yolk (ever heard of carbonara??) or soy lecithin into it until it's creamy and emulsified and suddenly OH, THAT'S GROSS? ๐๐๐
